Anchovies fished only in spring in the Cantabrian Sea in northern Spain using the lampara circle technique. This is where the finest anchovies come from in terms of taste and size.

Processed entirely by hand at the fishing site, left to season for long periods in barrels and packaged in a practical tray that allows easy removal of the fillets.
