It all starts in northern Spain, where the cold, deep waters, rich in oxygen and plankton, make the anchovies’ flesh tender and flavorful. We fish exclusively in spring, when the specimens are largest and fleshiest, using the lampara hoop technique, an ancient method that does not damage the seabed. They are then processed entirely by hand at the fishing site.
