These precious anchovies come from northern Spain, where cold, oxygen-rich waters and plankton make their meat tender and flavorful. Fished exclusively in the spring when they are largest and fleshiest using the lampara hoop technique, they are processed by hand directly at the fishing site to preserve their intense flavor and high quality.
