Source of protein

The consumption of mackerel is always beneficial, but even more so during pregnancy because there is very little methyl mercury, a contaminant often found in large fish that is best avoided during pregnancy.

Mackerel is also rich in iodine and selenium. Useful for the thyroid, iodine is essential in regulating the body’s metabolism. Selenium, on the other hand, is an important co-factor in the production of enzymes that act as antioxidants.

Mackerel in Jerusalem artichoke velouté

INGREDIENTS

• Mackerel with lemon Rizzoli 50 g
• Jerusalem artichoke 50 g
• Radicchio 20 g
• Onion 10 g
• A tablespoon of oil
• Salt to taste

METHOD

To make a creamy Jerusalem artichoke soup without using milk or cream, you need to add potatoes. They give the right consistency to the mixture which would otherwise be too runny. So, you need 50g of small, firm Jerusalem artichokes, half a potato, a shallot and vegetable stock. Peel and chop the Jerusalem artichokes and potato. Place the Jerusalem artichokes, potato and shallot in a pot, cover with vegetable stock and cook for 20 minutes.
Finally, blend and add salt to taste.
Wash and clean the radicchio, removing the most scenic leaves that will be used for the final composition of the dish. Cut the onion into julienne and place it on the radicchio. Add raw extra virgin olive oil. Use the Jerusalem artichoke cream as the base of the dish, place the cut onion and radicchio leaves on the cream, garnish with mackerel on the onion and sprinkle with thyme and oil.

Sgombro in vellutata di topinambur

INGREDIENTI

• Sgombro al naturale al limone Rizzoli 50 g
• Topinambur 50 g
• Radicchio 20 g
• Cipolla 10 g
• Olio un cucchiaio
• Sale q.b.

Metodo di preparazione

Per preparare una vellutata di topinambur dalla consistenza cremosa senza l’uso di latte o panna, è necessaria l’aggiunta di patate: danno la giusta consistenza al composto che altrimenti risulterebbe troppo liquido. Procuratevi, dunque, 50g di topinambur piccolo e sodo, mezza patata, uno scalogno e brodo vegetale.
Pelate e tagliate a tocchetti il topinambur e le patate. Trasferite in una pentola topinambur, patata, scalogno, ricoprite con brodo vegetale e lasciate cuocere per 20 min. Infine, frullate aggiungendo a piacimento il sale.
Lavate e pulite il radicchio, togliendo le foglie più sceniche che verranno usate per la composizione finale del piatto. Tagliate la cipolla a julienne e posizionatela sul radicchio. Aggiungete olio extravergine di oliva a crudo. Utilizzate come base del piatto la crema di topinambur, posizionate la cipolla tagliata e le foglie di radicchio sulla crema, guarnite con lo Sgombro sulla cipolla e spolverate con timo e olio.
